Local honey is best. I produced my honey naturally without pesticides or chemicals. My honey is safe from contaminants, and my honeybees are healthier as well, as a result of using natural methods to control disease and mites.
I rely on catching wild swarms of feral honeybees to capture the biodiversity of their natural resistance to mites and disease.
My honey is raw, uncooked to preserve its natural goodness and unprocessed to retain the nutritional integrity.
